3 easy student recipes



One of the more challenging aspects of university if you are living away from home can be cooking for yourself and having to think of new meal ideas Every. Single. Night.


This can seem overwhelming but I'm here to save you with three of the easiest and cheapest meals to make as a student. All of these recipes will make at least two portions, which means less nights spent cooking and more studying (or partying). 



CHICKEN FAJITAS





Simply fry off the chicken breasts, bell pepper, onion and fajita seasoning packet in a pan. Then add to a tortilla wrap! For extra flavour, top your wrap with guacamole, salsa and soured cream. 


Top tip: Use frozen vegetables instead of fresh e.g. frozen onion and pepper. Not only does this save money, but saves time chopping vegetables and washing up.



CHICKPEA CURRY




This is one of the cheapest meals a university student can make and it’s also suitable for vegetarians and vegans!  Fry an onion along with garlic granules and curry powder. Once the onion is soft, add a chopped tomatoes, coconut milk and chickpeas to the pan, cooking for another 10 minutes. If you're feeling healthy, add some spinach to the pan and stir until it wilts, serve with rice or naan bread. 


Top tip: use a microwave packet of rice for quick and easy meal preparation




PASTA BOLOGNESE




A classic recipe loved by all, it's no surprise that this has made the list. In a pan, fry mince, onion and pepper. Once cooked, add bolognese sauce and let it simmer for 15 minutes. While the pan is simmering, boil another pot of water and add pasta until soft. Once the pasta is boiled, drain the water and serve with a generous helping of bolognese.


Top tip: buying meat in bulk can help you save on your food shop. For recipes like this, you could purchase a large portion of mince, split it up into zip-lock bags and write the use by date and date of freezing with a permanent marker before putting in the middle freezer drawer.
